Educational - Protein Hydrolysates Support

Hydrolysed infant formulas can be manufactured based on different protein sources with the dominant ones being from whey, casein, or rice. In principle there are 3 different types of hydrolysates used in infant formula for different target groups (see table in image)

For infants with severe Food allergy and very little tolerance, infant formulas can also be manufactured from single amino acids.

In general, the more hydrolysed or the shorter peptides and more single amino acids the more bitter tasting the infant formula would be. Bitter taste is seldom a problem for the infants but can be a problem for infants older than 4-6 months, and parents normally prefer products with as little bitterness as possible. In many countries it has become a medical practise to give the new-born baby Infant formula shortly after birth as it takes time for the mother to adapt to breast feeding and provide her milk fast enough. With this practise it is recommended to use an allergy prevention hydrolysed formula (10<dH<20) or a formula for allergic infants (dH>20) for the first day or so to reduce the baby’s risk of later development of Cow’s Milk Allergy (CMA) or atopic dermatitis.

For the infant formula manufacturer, it is very challenging to develop and produce infant formula using protein hydrolysates. There are many additional considerations and practises that needs to be right such as legislation, EFSA approval, contaminant prevention, ingredients and hydrolysate selection, emulsion stability, reconstitution properties and drying conditions.
